Loaded energizing tofu scramble – Mika’s Table
This scrambled tofu is so delicious that even the dreaded Monday won’t sound so scary anymore! In fact, you will celebrate it with this delicious, protein packed breakfast!
This Loaded energizing tofu scramble has been my go to when the day ahead feel more like a nightmare than anything else!
It’s also very easy to make, I sometimes cook it the day before for a quick dash out of the door! You know, anything to make Monday feel less like one!
It’s simple but mighty, believe me! A balance breakfast is a good way to avoid mindless snacking!
I always buy the firm tofu type and just crumble it with a spoon in the pan, it takes just a few seconds then I add black pepper, the veggie of my choice although broccoli and kale are my go-to. Sometimes, I’ll even throw in some bell peppers or tomatoes but onion is definitely a must for me! My scrambled tofu tastes practically naked without onions.
Sprinkle some turmeric follow by some salt! I always add salt last.
Tofu has this way to absorb it so quickly in its watery state, it’s also a good way for me to use less salt. I don’t need to start the week bloated!

- 1/2 block firm organic tofu
- salt and pepper to taste
- 1 cup of roasted chickpeas no salt added
- 1 cup chopped broccoli florets
- 1/2 cup chopped baby bella mushrooms
- 1/2 cup red onions
- sliced whole grains bread optional
- 1/2 teaspoon turmeric
Heat up a pan on medium.
Add the tofu,crumble it.
Add the onions, mushroom, black pepper, and broccoli.
Cover with a tight lid. Let simmer for 5 minutes.
Uncover give it a good stir. Add the turmeric and salt.
Let cook for a couple more minute or until the veggies are done.
Remove from Heat. Serve topped with the roasted chickpeas and tahini sauce over some of the bread.
Easy tahini sauce
- 2 tablespoon tahini
- 1 large lemon
- 1 tablespoon water
- 1 teaspoon Apple cider vinegar
- a pinch of salt
Add everything in a mixing bowl. whisk until creamy and serve!
